Ingredients
- 6large egg yolks
- ½ cupSweet Bean Granulated Sweetener
- 1 cupheavy whipping cream or canned coconut milk
- 2 cupsunsweetened coconut milk
- 2cinnamon sticks
- ¼–½ tspground nutmeg (freshly grated is best)
- salt (pinch)
- 1 tspvanilla extract
Instructions

Whisk egg yolks and sweetener together until light and creamy.

In a saucepan over medium-high heat, combine cream, coconut milk, nutmeg, and salt. Add cinnamon sticks. Stir often until mixture just begins to simmer.

One spoonful at a time, add hot cream mixture to the eggs, whisking vigorously to temper.

Pour mixture back into the saucepan. Whisk constantly until just slightly thickened (about 165°F). Remove from heat and stir in vanilla.

Pour into a pitcher, cover, and refrigerate until chilled. Remove cinnamon sticks. Strain if desired, or thin with a little milk if needed.
