Breakfast Street Tacos

Ingredients

  • 1 lbchopped steak (leftover steak works great)
  • ½ cupwhite onion (chopped)
  • 1 Tbsolive oil
  • ¼–½ tspMexican oregano
  • salt (to taste)
  • pepper (to taste)
  • garlic powder (to taste)
  • fresh lime juice (juice from ½ lime)
  • 6–8eggs
  • corn tortillas
  • cheese (your choice)
  • avocado (sliced, mashed, or cubed)
  • cilantro (for garnish)
  • hot sauce or salsa

Instructions

    Heat olive oil over medium heat in a cast iron pan or griddle. Sauté onions until translucent.

    Add steak and seasoning. Cook until done. Remove and cover to keep warm.

    Melt a tablespoon of butter in the pan. Add eggs and scramble. Remove from heat.

    Cook tortillas in a separate pan with a little cooking spray. Melt cheese on top of each tortilla.

    Fill tortillas with steak, eggs, and avocado. Top with hot sauce and garnish with cilantro.
