Ingredients

  • ⅔ cupSweet Bean Sweetener (powdered) (for main coating)
  • ⅓ cupSweet Bean Sweetener (powdered) (for finishing coat)
  • 1 tspground cinnamon
  • ¼–½ tspsalt (or to taste)
  • 1large egg white
  • ½ Tbsvanilla
  • ½ Tbswater
  • 1 lbpecan halves

Instructions

    Preheat oven to 250°F.

    Mix ⅔ cup powdered sweetener, cinnamon, and salt in a small bowl.

    Whisk egg white, vanilla, and water in a large bowl until frothy. Toss pecans to coat. Slowly pour in the sweetener mixture and stir until evenly coated. Spread onto a baking sheet.

    Bake 10 minutes. Stir and rearrange into a single layer. Continue baking, stirring every 15 minutes, until evenly browned — about 45 more minutes.

    Cool completely on the pan. Transfer to a large bowl.

    Add the remaining ⅓ cup powdered sweetener and toss until uniformly coated to prevent sticking.
